Antipasto pizza Lunch

Two italian favorites made into one great meal, pizza crust topped with antipasto

Ingredients.        

10 oz ready to heat low carb pizza crust 
2 cups iceberg lettuce, shredded 
1 fresh tomato , seeded and chopped 
1/2 red onion , thinly sliced 
1 medium carrot , shredded 
3/4 cup fresh cucumber, peeled and chopped , seeded 
5 Olives, black, jumbo, pitted, sliced 
2 tbsp balsamic vinegar 
1 1/2 tbsp extra virgin olive oil 
1/2 tsp ground oregano , dried 
2 tbsp grated Parmesan cheese 


Preparation.        

1 Preheat oven to 450 degrees F. 
2 Lay pizza crust on oven rack and bake 10 minutes. 
3 While crust is baking mix together lettuce, tomato, onion, carrot, cucumber, olives, vinegar, oil, and oregano. 
4 When crust is done spoon mixture on top of pizza crust; scatter cheese over top slice and serve. 
Additional Information
For added protein add lean chicken, turkey, beef, or ham. Use a variety of toppings on this pizza.
