  • Ingredients:
    • 1 cup lentils (a great plant-based source of iron)
    • 2 cups fresh spinach (rich in iron and folic acid)
    • 1 carrot, chopped
    • 1 celery stalk, chopped
    • 1 small onion, diced
    • 2 garlic cloves, minced
    • 4 cups vegetable broth
    • Salt, pepper, and lemon juice to taste
