Warm Quinoa Salad with Roasted Veggies

              


 Ingredients:

    • 1 cup cooked quinoa
    • 1/2 cup roasted sweet potatoes
    • 1/2 cup roasted Brussels sprouts or broccoli
    • 1 tbsp olive oil
    • Salt and pepper to taste
    • A sprinkle of fresh parsley or basil
  • Instructions:
    1. In a large bowl, combine the cooked quinoa and roasted veggies.
